Chocolate Blueberry Muffins
Good morning everyone!!! Sorry I left chat abruptly last night - got kicked out, couldn't get back in, and eventually got tired and went to bed.
But I did remember that somebody (Tudu or KB?) asked me for my chocolate blueberry muffins recipe, so here it is: Makes 12 large muffins. Ingredients: 1/2 cup butter 3 oz. semisweet chocolate chips (sometimes I use milk choc.) Generous 1 cup sugar 1 egg, lightly beaten 1 cup buttermilk 2 tsp. vanilla 2-1/2 cups all purpose flour 1 tsp. baking soda Generous 1 cup fresh or frozen blueberries, thawed Preheat oven to 375 degrees. Grease 12 deep muffin pans - or use paper liners. (These come out really big, so if you want them smaller, make 15-16 instead of 12) In a medium saucepan over a medium heat, melt the butter and chocolate until smooth, stirring frequently. Remove from heat and allow to cool slightly. Stir in the sugar, egg, buttermilk and vanilla. Gently fold in the flour and baking soda just until blended. (do NOT overblend, although the mixture may be lumpy with some unblended flour). Gently fold in the berries. Spoon the batter into the prepapred pans, filling to the top. Bake for 25-30 minutes, until a skewer or toothpick inserted in the center comes out with just a few crumbs attached. Remove the muffins in their paper liners to a wire rack immediately - if they are left in the pan, they will get soggy. You may decorate these with an additional 1 oz. semisweet chocolate, melted, and drizzled across the tops. Serve muffins warm or cool (but warm is the best!!!) Chocolate Chip Cherry Bread
This is a favorite of my family and it's so healthy for them I don't mind them having it for breakfast. I like to make them into muffins. I ALWAYS at least double the recipe.
HEALTHY CHOCOLATE CHIP BREAD
(Please don’t tell my children it’s good for them!)
-low in fat, high in protein, high in taste!
1 cup all-purpose flour (I often use all wheat flour instead of 1/2 and 1/2) ¾ cup wheat flour ¼ cup protein powder (or powdered milk) – optional ¼ cup cocoa powder 1 ¼ tsp baking powder ½ tsp baking soda 2 tsp ground allspice Pinch of salt (optional) 3 ripe bananas, chopped (if they’re very ripe and won’t chop, mashed is OK) 1 TBS butter 3 TBS applesauce 2/3 cup brown sugar (or substitute) ½ cup egg substitute (2 eggs) ½ cup reduced-fat sweet or semi-sweet chocolate chips 1 cup dried cherries -rehydrated (boil in microwave) - optional Preheat oven to 350 degrees. Coat a nonstick 8 x 4-inch loaf tin with nonstick cooking spray. In a large bowl, mix flours, protein powder, cocoa powder, baking powder, baking soda, allspice, and salt and set aside. In a separate bowl, place mashed or chopped bananas, butter, applesauce, and brown sugar. “Cream” the mixture with an electric mixer. Add egg substitute and mix for 1 minute. Add flour mix, blend together, and stir in chocolate chips (and cherries). Pour into loaf tin and bake for about 50 minutes or until a toothpick stuck into the center comes out clean. Cool 10-15 minutes and remove from pan onto a baking rack. Options: Use ¼ cup reduced-fat chocolate chips and ¼ cup peanut butter chips. Add ½ cup chopped and dried apricots or ½ cup nut crunch cereal. Suggestions: Break up in chunks and pour hot skim milk all over it for breakfast. Toast a slice of Chocolate Chip Bread and serve it with raspberry jam. Double wrapped, Chocolate Chip Bread freezes well. I hope no one minds me posting this here.
