CHICKEN DIVAN A'LA CROCKPOT
2-3 c. cooked, cut up chicken
1/2 sm. onion, chopped
1 (10 3/4 oz.) can cream of chicken
soup
1/3 c. mayonnaise
3 tbsp. flour
2 celery stalks, cut up
1 (10 oz.) pkg. frozen broccoli cuts
1/2 tsp. curry powder
1 tbsp. lemon juice
Hot buttered noodles
In medium bowl, thoroughly combine all ingredients except noodles. Pour into lightly greased crockpot. Cover and cook on low setting 6-8 hours or on low setting 2-3 hours. Serve over hot buttered noodles. Makes about 2 quarts. Hint: I add carrots (raw, cut up) and more broccoli, sometimes. You can double this recipe. You can also add some chicken broth if too thick. You can mix this the night before and keep in refrig and cook the next day while you're away.

CROCKPOT - SWEET AND SOUR CHICKEN
1/2 c. finely chopped pepper
1/2 c. finely chopped onion
3 chicken breasts
1 (10 oz.) jar sweet-sour sauce
1 (15 1/4 oz.) can pineapple chunks,
drained
3 tbsp. cornstarch
3 tbsp. cold water
Hot cooked rice
Place pepper and onion in pot. Top with chicken breasts. Pour sweet-sour sauce and pineapple chunks over all. Cover. Cook on low 7-8 hours (or high 3 1/2-4 hours). Remove chicken; keep warm. Blend cornstarch and water. Stir in juices. Cover. Cook on high 10-15 minutes until thickened. Serve over hot rice.

CROCKPOT CHICKEN AND DUMPLINGS
1 cut up chicken (may use 2)
1 pkg. chicken bouillon cubes
Onions and carrots
Flour
1 sm. pkg. Bisquick mix
Wash chicken; drain on paper towels and place in pot. Add 3 cups water and 3 bouillon cubes. Cut up 3 or 4 carrots (large pieces), also 4 or 5 small onions. Place these in crock pot at noon on low. Cook for about 6 hours. Turn pot on high and add flour mix (2 tablespoons flour mixed with 1/2 cup water, shake together in a jar). Pour into pot and mix. This should thicken gravy. Use more flour and water if necessary. Cook on high for 15 minutes. Make dumplings from Bisquick mix recipe. Put dumplings in pot and keep covered on high until cooked. Crock pot cooking is slower and it may take longer than an additional 15 minutes.

CROCKPOT TURKEY
Turkey breast with the bone
1 can Campbell's cream of mushroom
soup
1 can Campbell's cream of chicken soup
Crockpot
Potatoes
Carrots-Vegetables
Place both soup cans in crockpot (but with no water). Mix with a whip. Place turkey breast in crockpot. Spoon the soup over the turkey. Cover and cook on high to medium all day. Cook potatoes and mash. Use the soup for gravy.

CHICKEN LICKIN' GOOD PORK CHOPS - CROCKPOT
6 to 8 lean 1 inch thick pork chops
1/2 c. flour
1 tsp. salt
1 1/2 tsp. dry mustard
1/2 tsp. garlic powder
2 tbsp. oil
1 (10 oz.) can chicken with rice soup
Mix flour, salt, dry mustard and garlic powder. Coat pork chops. Brown chops in oil in large skillet. Place browned pork chops in crockpot. Add can of soup. Cover and cook on low 6 to 8 hours. (High 3 1/2 hours).

CROCKPOT CHOW MEIN
1 (28 oz.) can chow mein vegetables,
drained
1 (4 oz.) can sliced mushrooms,
drained
1 (4 oz.) can sliced water chestnuts,
drained
2 cans cream of chicken soup
1 can cream of mushroom soup
Cut up cooked chicken (optional - the
recipe is very good without too!)
Put all ingredients in crockpot, stir once and heat on low for 4 hours. Serve over rice or chow mein noodles and season with soy sauce to taste.

"CROCKPOT" "BEAN SOUP WITH CORNMEAL DUMPLINGS"
1 (15 1/2 oz.) can red kidney beans,
rinsed and drained
1 (15 1/2 oz.) can black beans, pinto
beans, or great northern beans,
rinsed and drained
3 c. water
1 (14 1/2 oz.) can Mexican-style
stewed tomatoes
1 (10 oz.) pkg. frozen whole kernel
corn, thawed
1 c. sliced carrots
1 c. chopped onion
1 (4 oz.) can chopped green chili
peppers
6 beef bouillon cubes
1 tsp. chili powder
2 garlic cloves, minced
1/4 c. yellow cornmeal 1 tsp. baking powder Dash salt Dash pepper 1 beaten egg white 2 tbsp. milk 1 tbsp. cooking oil In a 3 1/2 or 4 quart crockpot combine canned beans, water, tomatoes, corn, carrot, onion, undrained chili peppers, bouillon cubes, chili powder, and garlic. Cover and cook on low for 10 to 12 hours; or on high for 4 to 5 hours. For dumplings, in a small mixing bowl stir together flour, cornmeal, baking powder, salt and pepper. In a medium bowl, combine egg white, milk and oil. Add to flour mixture, stir with a fork just until combined. If soup was cooked on low heat turn to high. Drop the dumpling mixture from a rounded teaspoon to make 8 mounds atop the soup. Cover and cook for 30 minutes more. (Do not lift cover). Makes 4 servings.

RED BEANS AND RICE IN CROCKPOT
4 (15 oz.) cans New Orleans red beans
1 env. onion soup mix
1 tbsp. Worcestershire sauce
1 (19 oz.) can chili
1/2 chili can water
1/2 tsp. seasoned salt
1 1/2 lbs. smoked link sausage (2
inch pieces)
Combine all ingredients and slow cook all day

CROCKPOT MEATBALL STEW
1 lb. ground turkey
1/4 c. bread crumbs
1 egg
2 tbsp. tomato sauce (or 2 tbsp.
crushed tomatoes)
1 tsp. each: dry minced onion, basil
and oregano
Dash of salt and pepper (salt
optional)
Mix together well (makes 16 almost golfball size meatballs). BROWN in pan, set aside. Into crockpot add:4 med. size potatoes (peeled and cut
into bite size pieces)
1 carrot, sliced
1 to 2 onions, diced
1 (16 oz.) can crushed tomatoes
1 tsp. each: basil and oregano
1/4 tsp. garlic powder
1 tsp. Worcestershire sauce
Salt and pepper to taste (salt
optional)
Add meatballs on top. DO NOT STIR. Cook on low 8 to 10 hours. Before serving, mix together: 1 tablespoon cornstarch with a little cold water. Add to stew, stir with wooden spoon. Serve. Makes 6 servings.

CROCKPOT BARBEQUE PORK ROAST SANDWICHES
1 sm. pork roast (boneless or bone in)
Lemon pepper
Salt and pepper to taste
Garlic salt
1 onion, chopped
1 jar barbeque sauce
Cover roast with water in crockpot and cook overnight. next morning take roast out of pot and shred in pieces. Put back in crockpot. Add other ingredients and cook until thick. Serve on buns. New Years Day Football Family Tradition.

CROCKPOT BARBEQUE RIBS
3 lbs. spareribs
Salt and pepper
1 onion, sliced
1 (16 oz.) bottle smokey barbeque
sauce (or 2 c. homemade sauce)
Sprinkle ribs with salt and pepper. Place ribs in broiler pan under broiler for 15 minutes to brown and remove excess fat. Put sliced onion in crock pot. Slice ribs into serving pieces and put in crock pot. Pour in barbeque sauce. Cover and cook on low 8-10 hours or on high 4-5 hours.

EASY CROCKPOT POTATOES
1 can cream of mushroom soup
Dash of garlic powder
Salt & pepper to taste
16 oz. jar Cheez Whiz
2 lb. bag Southern style hash browns
1/2 stick (1/4 c.) butter or margarine
Mix in crock pot and cook on low for 6-8 hours or high for 3-4 hours. Note: Because of cheese and soups, you probably can eliminate putting any salt in this recipe.

CROCKPOT SCALLOPED POTATOES
6 to 8 slices ham, diced
8 to 10 med. potatoes, thinly sliced
1 c. grated American cheese
Salt and pepper
1 can cream of mushroom soup
Paprika
1 onion, thinly sliced
In crockpot layer half of ham, half of potatoes, half of onions, half of cheese. Sprinkle with salt and pepper. Repeat layers with remaining half of ingredients. Spoon undiluted soup over top and sprinkle with paprika.

CROCKPOT CORN
1 lg. bag frozen corn
1 can cream style corn
8 oz. Philadelphia cream cheese
1 stick butter or margarine
High 2 hours, then low.

CORN BREAD - CROCKPOT
1 1/4 c. flour
3/4 c. cornmeal
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 egg, slightly beaten
1 c. milk
1/3 c. melted butter
Mix together flour, cornmeal, sugar, baking powder and salt. Mix in egg, milk, and butter until flour mixture is moistened. Pour into well buttered floured tin that will fit into pot. Cover with plate and put into pot. Cover and cook on high for 2 to 3 hours.

I'm a lazy crock pot person, so don't do this one very often, but the kids like it.

Crock Pot Pizza
12 oz. wide egg noodles (cooked according to directions, drain just before using)
1 1/2 pounds ground meat (beef, turkey, veggie substitute)
1/4 cup chopped onion
1 jar, 28 oz., spaghetti sauce
4 1/2 oz container of sliced mushrooms, drained
1 1/2 tsp Italian seasoning
3 1/2 oz. sliced pepperoni, halved
3 cups (12 oz.) shredded mozzarella cheese
3 cups (12 oz.) shredded cheddar cheese

Brown ground meat & diced onion until meat is no longer pink. (Drain fat, if needed.) Stir in spaghetti sauce and mushrooms, and Italian seasoning. Coat bottom of 5 quart slow cooker with non-stick spray. Spread 1/3 of the meat mixture. Cover with 1/3 of the noodles, and layer 1/3 of the pepperoni on top. Sprinkle with 1/3 of the cheeses. Repeat layers twice. Cover and cook on low for 3-4 hours, or until heated through and cheese is melted. Serves 6-8.


My Easy-Peasy Pork Chops
some pork chops
1 can of jellied cranberry sauce

Brown pork chops and layer in the crock pot. Heat can of cranberry sauce and stir until smooth, adding a bit of water if needed. When the sauce is liquid, pour over each pork chop. Use all sauce. Cook for however long it takes to cook the pork chops through. (What? Like I'm supposed to know? It depends on how thick your chops are, etc.) When cooking meat I usually start my crock pot out on high for the first 1/2 hour or so, to get it hot, then turn down to low and cook until dinner time; usually somewhere between 5 and 8 hours. Serves how ever many pork chops you put in, or if you split the pork chops between people it serves more, or if someone eats two chops it serves less....

My kids love chili, and chili tastes much better when done in a crock pot. It's very flexible, but here's what I made last time, to great acclaim:

black beans--canned are fine, say two 15 ounce cans
a peeled sweet potato, diced
1 red pepper, diced
1 large onion, chopped
3 cloves of garlic, minced
1 yellow squash, diced (zucchini is also good)
a large can of diced tomatoes (28 ounces, I think?)
15 ounce can of diced tomatoes, chili style
about 1/4 cup chopped cilantro
1 minced chili pepper
1 entire box of Boca burger crumbles
1 packet of Tex-Mex Chili spices from McCormick, I think

Dump in crock pot and cook! I parboiled my sweet potato and had mine on high for 4 hours, and it was great. With chili, longer is better.

I serve with full fat sour cream (want my kids' brains to get the benefits of fat) and shredded cheddar cheese. I also have a rice cooker, so I just throw rice in there, and it's done in no time and is perfect. Serve with a green salad, and you have a very healthy meal.

Spaghetti sauce from a crock pot is also very good, and always a hit with the kiddos.

I use:

a large can of pureed tomatoes
about a tablespoon of tomato paste
a chopped and sauteed onion
3 cloves of garlic, minced
a chopped bell or red pepper
dried or fresh oregano and basil to taste (for dried, let's say, oh, about 2 teaspoons each?)
salt and pepper to taste
a tiny bit of sugar to cut the acidity of the tomatoes

optional add-ins for variety: diced carrots, pinch of red pepper flakes, rosemary

I cook this all day, then puree in a blender since my hubby likes a smoother sauce.

This thread ROCKS... I only know one recipe for the crock pot... roast, potatoes, and carrots... cook the roast all day while I'm at work in water, as soon as I get home throw the carrots and potatoes in (I usually microwave the potatoes in water to start getting them soft) and its ready by 6 pm... I throw some onions in if the boys aren't looking...

Barki's Crock Pot Pizza and Lylac's Easy Crockpot Potatoes were a HUGE hit at our house this weekend... I printed all the recipes off - I'm now glad I have 2 crockpots!!!

Glad you enjoyed them, Kerb. I found that recipe when I had a teen fs; he liked helping me go thru my cookbooks to find recipes for our menus. (This was back when I was THAT organized! LOL) He also liked to cook, so....

I just made Brazilian Chicken in Coconut Milk, that would have been FABULOUS as a crockpot dish.

Rub onto 4 chicken breasts (or 4 pieces) (or some cumin and curry powder is fine instead)
1 teaspoon ground cumin
1 teaspoon ground cayenne pepper
1 teaspoon ground turmeric
1 teaspoon ground coriander

Saute:
an onion chopped/minced/sliced your choice
2 T minced fresh ginger
2 cloves garlic minced
1 seeded and chopped Jalepeno.
(or for less heat as a substitute just pour in 3-5 T salsa)

Mix sauteed onion mix with drained chopped tomatoes (canned or fresh is fine) (use as many or as little as you like, appx 3 tomatoes)

add one can coconut milk to tomatoes/onion mix

pour over chicken in crockpot...
serve over cooked jasmine rice...

Sorry, it took me so long to reply .
I use the smallest bag thats in the grocery store. I do not have a bag in the house, so I really do not know how many pounds, but next time I'm in the store I'll let you know.

yum, thanks guys! I work night shifts once a month so the crock pot is a huge help for DH and DD for dinners that week!
I have the minestrone cooking now and the ingredients for the vegeterian chili w/ the sweet potatoes for another night!
