OT - Need a recipe – quickly!
Hi guys,
It’s been a LONG time since I posted here, but I got stuck in a situation this morning and figured the boards would be a really good place to start! This week is multicultural week at DS’s preschool. Part of their celebration is a multicultural luncheon TOMORROW! Apparently, DS’s classroom isn’t very multi-cultured – only one mom signed up! She’s Chinese and making Chinese Dumplings. So the teachers pulled me aside this morning and asked me to make something Russian! Yikes – I can’t figure out what to make that’s Russian and something 4 year olds will like! Any suggestions/tried and true recipes? I’m terrified of making something from the internet and it being terrible – LOL! Thanks guys – and happy holidays! CJ |

How about Russian Tea cakes. I admit I had to google to see if they really were Russian and this is what I found at Wikipedia:
Russian tea cakes are a kind of pastry, commonly eaten in the US around Christmas. They are a form of jumble, a pastry common in Middle Ages England. They are also known as Mexican wedding cookies from having been served often at Mexican weddings. Composition Russian tea cakes have a relatively simple recipe, generally comprised entirely of ground nuts and flour (with water), baked, and then coated in powdered sugar. History Russian tea cakes appeared in Russia in the 18th century, literally as a confection used in a tea-sharing ceremony. By the 20th century, they were a part of wedding and Christmas traditions in the US, by their popular "Russian tea" nomenclature.

Here's another option, as well--a Russian recipe for a very sweet toffee-like dessert. Measure equal amounts (for example 1 cup each) of cream and sugar in a microwave safe bowl. Watch carefully while heating with full power. Once per minute mix it with a spoon and put it back. If it starts to come over the bowl edges, take it out to cool down for a minute and then continue. After few minutes it turns to smooth but thick caramel that sticks to the spoon. Drop it by spoonfuls onto small plates and let it cool completely before serving.

Here's a good one for this time of year!
CHRISTMAS MORNING RUSSIAN COFFEE CAKE 1 c. sugar 1/2 lb. butter 1 pt. sour cream 3 unbeaten eggs 2 1/2 c. flour 3 tsp. baking powder 1 tsp. baking soda Cream together sugar and butter. Add sour cream. Add unbeaten eggs, one at a time. Combine flour with baking powder and baking soda. Dough will be stiff. Spoon half the dough into a well-greased and floured 10-inch tube pan. Sprinkle 3/4 of filling over first half of dough. Spoon in remaining dough and sprinkle rest of topping. Bake 1 hour at 350 degrees. Cool 1 hour before removing from pan. FILLING AND TOPPING: 3/4 c. sugar 4 tbsp. cinnamon 1 c. chopped nuts (walnuts
