Congratulations! We left this time last year to pick up our little girls. It brings back such good memories.
We had one daughter who traveled well on the airplane and one who didn't. They were both enthralled with the airplane instruction pamphlet (the one that shows how to exit the plane, etc...), the airline pillows and blankets. Crayola Color Wonder is really good for that age. They can color with these markers that are invisible on anything else but the special paper. Something both kids loved was putting items in a bucket and taking them out. We brought those stacking cups and they put cheerios or little play animals or something in and out of those cups over and over. Toy phones and keys always go over really well. Photograph books sometimes hold their attention more than a real book does. We chose to use a pacifier for our 2 year old because she just didn't handle the flights well. Our flight to Moscow from our region was 8 hours and those Russian flights can be quite interesting. Good luck!!
