OT- Pumpkin Seeds
Happy Halloween !
Does anyone have a good pumpkin seed receipe? Every year I try a new one and haven't found the "right" one yet. Thanks, Kristin |

My mom used to wash them, lightly salt, spread on cookie sheet and roast in the oven for several hours on a very low temp.

I don't wash mine, I think the little bits of pumpkin add to the taste. I pull off all the pumpkin strings that I can, and leave the rest. Spread them on a cookie sheet, lightly salt them, and cook them at about 300 degrees until they smell done. (Sorry, I never have timed it, I just go by the smell.)
When I take them out, I wait until they've cooled, and serve directly from the cookie sheet when possible -the salt and dry pumpkin flakes off too easily and leaves them plain if I try to put them in a different container. If I have to move them, I do it the same way I move hot cookies - with a metal spatula, straight to a plate. |

don't have a receipe but i saw pumpkin seed brittle at the bakery yesterday. looked great!

Coat them in olive oil, sprinkle with sea salt. They were SO yummy!

I tried a new recipe this year. Boil them in rather salty water for 10 minutes to infuse them with salt and get them sort of cooked--I did about 3 TBSP sea salt in 2 cups of water. Drizzle a baking sheet with olive oil and then spread the drained seeds on that and roll them around a bit to get them covered. Sprinkle with more salt if you like or some seasonings (cayenne is good) and bake on the top rack at 400 for 10-20 minutes (until brown and toasty).
