I need a recipe!

I am looking for a good Guatemalan dessert recipe and I know you can all help me out. I don't want it to be too difficult, but share anything you know of or have tried.

I did a search on the forum and found the recipe for the easy version of a Tres Leches cake. Looks tasty......I may have to try this one myself. It was posted by
rlf0504 in Aug., 2004.

Tres Leches (Three Milks) Cakes
1 package yellow cake mix (w/out pudding in it)
1/3 cup oil
3 eggs
1 cup water
¾ cup milk
¾ cup evaporated milk
½ cup sweetened condensed milk
1-16 ounce Cool Whip
16 ounces fresh strawberries (optional)
1-1 ½ cup chopped pecans (optional)

Prepare cake mix with oil, eggs & water according to package directions. Spread in 2 round, greased & floured cake pans.
Bake according to package directions. Cool. Remove from pans. When fully cooled, use serrated knife & slice ¼” off top of each layer. Combine 3 milks, blending well.
(I use a liquid measuring cup to keep track of how much I use, you’ll have ½ cup left over) Place 1st layer on cake plate, cut side up. Carefully drizzle ¾ cup milk mixture over top to soak in evenly (tilt plate, use ladle). Spread top & sides with Cool Whip. Layer with strawberries & pecans if desired. Place top layer, cut side up on top. Drizzle with ¾ cup milk. Spread with Cool Whip. Layer berries & pecans. Chill in refrigerator.

I was going to post a tres leches but someone already did. I use this recipe:
Tres Leches Cake - All Recipes

But like the PP I use strawberries rather than the cherries. Rather than fussing with a 2-layer cake I just bake it in a 9x13 glass and do one big layer, but certainly the 2 layers would look prettier. I also whip my own cream with a touch of powdered sugar & vanilla in it but that's mostly b/c there's leftover whipping cream from the pint after I make the tres leches mix.

I've made this cake dozens of times now (using this exact recipe). It's easy and delicious. I use bananas and/or blueberries for the fruit.

Hint: After the cake tops are serrated, stab heavlly the "bodies" of the cakes with a fork. The idea is to get as much of the "tres leche" (milk mixture) inside the cake. Using this recipe, I use half of the milk mixture and freeze the other half for the next cake. It's plenty "milky". I also do not put whipped cream between the cakes, only on the top and sides. If you're lucky to have leftovers, it's even more delicious the day after - when it's really soggy!

Also, a benefit of making two cakes is that you can put the serrated tops in a separate bowl, add some of the milk mixture, then top w/ cool whip and let the kids enjoy. Mine are never patient enough to let me finish the darn thing first.

I saw this on the Forum not too long ago. I haven't made it (yet) but it sounds yummy!

Cinnamon Tortilla Chips
1 pkg. of flour tortillas
Melted butter-about 1 stick
Mix 1/2 tsp of cinammon w/ 1/2 c sugar
Preheat oven to 350
Brush tortillas with butter & sprinkle w/ cin./sugar mixture
Cut into 8 wedges w/pizza cutter, bake on cookie sheet for 8-10 mins until crispy

Fruit salsa
1 cup strawberries
3 kiwis
1 jar of pineapple chunks
1 medium orange
2 TBS parsley
2 green onions
1 jalapeno pepper
1 TBS lime juice
Finely chop everything and squeeze w/ lime juice

Here's another dessert-
Fried Banana's (w/ice cream if desired)

4 TBS butter
10 bananas
1/4 c sugar
1 can of evap milk (12 oz)
1tsp corn starch
1 tsp vanilla extract
ground cinnamon
Vanilla ice cream

brown 5 bananas in 2 tsp butter until brown on all sides
repeat w/ remaining bananas
In a saucepan combine evap milk, sugar corn starch, and vanilla extract & stir contantly until thick.
Pour over bananas in serving dishes & sprinkle w/ cinnamon.
You can add:

A scoop of vanilla ice cream-- Sometimes we have Guatemalan banana splits with these bananas-we omit the cinnamon, and use whip cream, nuts and top w/ a cherry. The kids love these & so do I!

Thank you everyone. I was leaning towards the tres leches cake already...now, I am convinced to do it. I just have to decide if I need to do a practice run or just wing it on the day I need it. It doesn't sound too hard.
