Easy to make food from Guatemala...Help!
This Friday we have an adoption group Family Dinner night. We all bring something from our child's birth country...and I need ideas! It has to be really easy to make and take.

Our easiest/best is black beans... I don't know how authentic it is, but it's yummy. :-).
Saute garlic (1-2 cloves), an onion, red/green peppers (about half a cup finely chopped) in some olive oil. Add two cans undrained black beans, 2 bay leaves, and a quarter tsp. of ground cumin. Simmer 15 minutes. Remove bay leaves and serve warm. It's good over rice or just as it is. In fact, this is what we had for dinner tonight! |
