Need Guat recipe ideas please - OT
Hi everyone, I am hoping you all can give me some easy recipes for appetizers, main meal or dessert from Guatemala. DD's school is having teacher conferences in about a week and the theme is international....I'm on the hospitality committee, which helps feed the teachers during this long day. Would really like to make a recipe from Guatemala. It has to be something portable, that I don't need to do something to last minute, etc, because it will be dropped off around noontime and then eaten later that day. I looked into Arroz con Pollo recipes with the slowcooker but didnt' see one that you didn't have to add something to it in the last hour or so of cooking. Any easy to put together ideas would be appreciated!

I made this dish this weekend. My parents are total meat-and-potato eaters but liked this. It has some nice Guatemalan flavors but isn't spicy or overwhelming at all.
Pollo Encebollado It's from the False Tongues and Sunday Bread cookbook. There are a bunch of other recipes on that same webpage from the FT&SB book: Guatamalan recipes If you made the encebollado, I think you could easily do the chicken up and sautee the onions as directed and then put the sauteed onions in the bottom of a crockpot, put in the water, and put the chicken on top and let it simmer on low as needed (rather than letting it simmer in the cooking dish for 30 + mins as called for). We served it this weekend with a side of black beans (sautee some onion in corn oil, then put in a can of rinsed black beans and a few Tbsp of water and about 3 Tbsp of cream cheese, mash with a potato masher) and corn tortilla chips; white rice (although something more interesting would have been good); and roasted sweet potato wedges.

i tried this receipe tonight. it is really yummy and not too hard. i served it with yellow rice. it's in my favorite list.
