Monday's meal wasn't a hit :-(

Last night I made a Amatriciana sauce using turkey sausage for tonight's meal. Today I reheated it and served over linguine. My nephew didn't like the stewed tomatoes (wanted tomato sauce base but like the taste) and my husband said he wasn't in the mood for tomatoes (he picked out the sausage to eat) since he had an upset stomach (yet ate the sausage???!!!). I have enough linguine for my dinner tomorrow. I'll saute mushrooms, garlic and onions and serve over the pasta. I prepared the crockpot pot roast already for tomorrow's meal. It's is enough for two days meals for DH and nephew plus girls. I'll be creative for me since I don't do red meat.

Ana, you are way out of my league, but I made apricot chicken with cornbread stuffing (Crock Pot), cauliflower with cheese sauce and brownies (DH had a rough day!!)

*googling Amatraciana* WHAT?????? Goodness girls! We threw salmon into the oven with a little mixture of lemon juice, garlic, olive oil, salt, pepper and rosemary and broiled that for 15 minutes while our veggies from the freezer boiled and wa la! meal fit for a working family! Did I mention we also had fruit salad for dessert? teeheehee

LOL- Must be a Monday thing, because mine was a flop today. I used pasta left overs. The pasta was dry and the meatballs weren't quite hot enough. Didn't have enough to go around, so, I had to make a salad to fill everyone up.

I made Easy Cheesburger Pie - and it was JUST that.

Brown a pound or so of hamburger (with a cut up onion - but I hate cutting onions so I always leave it out) Grease a pie pan, drain the hamburger and put in the bottom of the pan. Add chiles (optional - also left this out). Sprinkle with 1 cup of cheddar cheese. Mix 1/2 cup Bisquick, 1 cup milk and 2 eggs. Pour over the hamburger/cheese. Bake at 400 for about 20-25 minutes.

These was actually pretty good. DH and I were both pleasantly surprised. Alex wouldn't eat it, but he's become very picky lately. I'm sure he will be hungry in the morning.

By the way, I get a lot of my ideas from this site. Weekly dinner menus | Home organization helps | Menus 4 Moms I really like the stuff on this site - and you can go full blown and follow their weekly recipees and get the grocery lists and everything. I don't do that, but I have pulled quite a few good ideas from here.

We did some pork chops on the grill with a little bit of BBQ sauce. We also did fries in the oven (we never really fry anything) and some brussel sprouts in light butter.

It was OK, everyone ate, and that is a good thing.

Today is my son's birthday...so tonight it is off to the Japanese Steakhouse for dinner...yummy!!

I used some leftover steak and made beef stroganoff. Cut up the steak, added a can of cream of mushroom soup, parmesan cheese, heat, add sour cream and serve over pasta and a side of green veggies. It's a fave in our house.

We had crockpot chicken. It's been posted before, but we occassionally make it around here as well. It's not a favorite, but is fine every once in a while.

Frozen Chicken breasts in the crock pot. cover with frozen veggies (we did broccoli, cauliflower and carrots last night - wouldnt suggest this - forzen peas are much better) and a can of cream of mushroom soup. Let cook all day and serve over rice.

The boys love rice and actually, the both ate all of their chicken so I suppose it was a success.

Tonight is tacos...a family fav!

We had salad, chicken with my mother's secret cheese sauce, rice and broccoli. I'll have to check out some of the other posters - I tend to cook and then freeze for easy reheats.
