Sort of sad...I don't cook again until Monday

Sorry if these cooking threads are a pain but I'm really digging the recipes and ideas.
Today I made BBQ pork chops in the crockpot. Then I went into cooking withdraw!!! DH is suppose to cook on the weekends. He will make breakfast dinner on Saturday (MY FAV!!) and probably grill on Sundays.

This morning at work (hush, my secret how I spend some time at work by not working), I created next week's menu, shopping list and dated print-out of the recipes & instructions. This makes it easy to cook and then I leave them on frig. door for nephew so he knows when to turn on crockpot or pop in oven for me.

My dear friends commented this is so me - get an idea/obsession and it takes over my mind/life. Why can't I regain the healthy eating and exercising obsession I lost a few years back??

What did you make today? How do you handle weekend meals?

DH is sleeping before his night shift so the kids asked for our breakfast for dinner menu! Most am's we are on the run for the school bus or a practice so it is cereal or oatmeal. SO, it is fun to have poached eggs, bacon, toast and cut fruit for dinner! The kids love it. That was our meal.

Wish I was there! I love eggs served anyway. One of my fav foods is fried eggs over white rice. Simple and so so good. I can't fry an egg (trust me, I've tried) so I'll have it at mom's or local cuban restaurant.

I was very excited today at work when hubby emailed me today and said, "dinner out?" After racing home this week, my first week back to work, preparing meals, and keeping on schedule, I was pooped! We new our daughter wouldn't last long at a restaurant, so we ordered quickly, scarfed it down and came home. It was nice too since I still haven't done the dishes since last night!!

But, it was a fun week, none the less

Good for you, Ana!!! Keep cooking! I will too, starting Sunday!!

I hate deciding what to make for dinner, and I'm always looking for ideas.

Here's a few things we ate this week

scrambled eggs and pancakes

Chilli (mostly kidney beans but DH used small cubes of beef (chuck roast) instead of ground beef)

Chicken salad wraps and butternut squash oven fries (so yummy!)

Sauteed Vegetables(zucchini, mushrooms, peppers, and peas and green beans) over rice

Vegi Burgers with Butternut squash oven fries again ( they are sooooo good)

ANA... I'm pretty sure this is how it all started for Martha Stewart.LOL

Last night we went to Friendly's so no cooking. Malea loves it there.LOL

I'm starting Weight watchers again next week so the meals i will be posting will be a bit more low cal but I'll keep posting if you keep asking!!!

I made an effort this week to try to cook all week and not go out and eat a bit healthier. I am soooo not organized nor a planner though, so it's really hard for me. I do love to cook, just don't have the time these days.

Well Friday nights my brother and his fiance takes the boys out to eat and do some kind of activity and Dh was working a little later than usual so the dog and I had prime rib.
Don't laugh, but yes I did cook prime rib for the dog and I. The kids had left overs for lunch and we will probably do a lighter dinner tonight.

Week end are usually later lunches that are more like dinners and then lighter dinners. Tomorrow (sunday) will be chicken parm.

I just discovered these in the Hungry Girl cookbook I just bought. I think I could eat them everyday! I didn't have cooking spray so I tossed mine in a teaspoon of olive oil instead. Another tip, if the slices are thicker they are easier to flip halfway through baking.

Bake-tastic Butternut Squash Fries!


(Serving Size: 5oz. of squash cut into fries, calories: 65, fat: 0g, sodium: 6mg, carbs: 16.5, fiber: 3g, sugars: 3g, protein: 1.5g)

Ingredients:
1/2 butternut squash
kosher salt

Directions:
Pre-heat oven to 425 degrees. Peel and de-seed your butternut squash. If you're unfamiliar with handling these large items, you may have a little trouble at first. They're fairly easy to peel, but you'll need a sharp knife to cut them. Once your orange friend is peeled and sans seeds, slice it in half. Then cut it up into french fry shapes. We like to use a crinkle cutter to make authentic looking crinkle cut fries, but they'll work any way you slice 'em. Place on a cookie sheet sprayed with non-stick spray. Cover lightly with kosher salt (regular salt works, too, but we prefer kosher salt). Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process. Fries are done when they are starting to brown on the edges and get crispy.

YUM!!!!!!!!!!!!!!!!! Thank you. I'm going to try it soon while the squash is still easily available over the winter.

Cutting the butternut the night before would be a huge time saver, and I don't think it would do any harm. It's not starchy like a potato and doesn't seem to get brown. It's more like a firmer pumpkin. If I try it I'll let you know how it works out. Great idea!
