YUM YUM Dinner tonight

I found this recipe on allrecipes from a Iphone App. It is Apricot chicken. Chicken (I used both breast and thighs, skinless & Boneless), Russian dressing (I used Light Catalina) 10oz, Lipton onion soup mix (I used one package) and 10 oz apricot preserves. I added minced garlic. Baked for 50 minutes. IT WAS SO GOOD. I served it over brown rice. I prepared it the day before and my nephew popped it in the oven an hourbefore I was due home. I use boil in the bag rown rice and also jasmine rice. I may look for sugar free apricot preserves for the next time I make it.

Oven Bake pork chops, mashed potatoes w/ Campbell's Beefy Mushroom soup as gravy and green beans. Very easy meal since I had leftover mashed potatoes.

As a thought, growing up my mom would put a little butter in a pan and fry the leftover mashed potatoes. She would then put an over easy egg over the top. The yolk was so good mixed with the potatoes. Serve with a side of stewed tomatoes (learned in England). You have a quick easy meal.

We had stuffed shells, garlic bread, corn and mixed fruit (blueberries/raspberries/blackberries)

The stuffed shells is my mom's recipee - very easy and able to be made ahead of time.

Cook 20-24 shells per directions. Beat one egg add 3/4 cup bread crumbs, some parsley, onion and 1 lb ground beef (I also added some italian seasoning). Brown the mixture. Put spaghetti sauce in the bottom of a casserole dish. Spoon the meat mixture into the shells and put in the dish. Cover with more sauce and mozzerella cheese.

At that point, you can put it in the refrig. Just microwave for 5-15 minutes (depending on how much everything has cooled down) to warm up.

I've been making the chicken forever and it's always a huge hit!! So good! Tonight we had tuna casserole - noodles, cream of mushroom soup, milk, tuna, cheese and topped with crunchy french onions - Always a bit hit!!
