I realize that I'm kinda dorky....(no comments necessary!) but I'm so excited. I'm REALLY trying to watch my diet now, and increase my fiber. SOOOO I made up (yup, me!) a recipe last night, calculated all of the fat/fiber/calories of ingredients and (I think) divided appropriately to come up with a meal that was under 300 cal a serving. AND IT WAS GOOD!!! I call it Blueberry Chicken. Dh ate 2 helpings, Bennett had 2 servings, and the two little ones cleaned their plate!! Hey...my life is kinda quiet...so this is big stuff for me!!! Fun fun.....

I'm in the same boat! I started weight watchers again (yes again!) and so now I am fixated on points, calories, and activity.

If you do have time, the recipe would be great!!

Blueberry Chicken

6 boneless skinless chicken breasts, trimmed
1 container fat free blueberry yogurt
1/2 c egg beater
1/2 c wheat germ
1 pkg classic shake and bake

Whisk yogurt and egg beater together until well mixed. Mix wheat germ and shake and bake. Coat each chicken breast in egg mixture and then roll in dry mixture until coated. Put chicken in Pam sprayed 9 by 13 pan. Bake at 375 for 40 min or until done.

Each serving:
290 calories
5 g fat
110 g protein

Sounds kinda weird...but I'm telling you, they ate it up!
