Wed. meal - I used leftovers. What did u make?

I used the leftover BBQ chicken from yesterdays crockpot meal to make chicken wraps with sour cream and cheese. I already have prepared in the frig. tomorrow's a meal. It is ready to pop in oven. It contains chicken, russian dressing (I used catalina light) and apricots preserves. I added seasoning and minced garlic. It goes in oven for 50 minutes.
What did you make? Do you prepare meal ides for the week or every few days?

vegetable soup in the crockpot...and we will have leftovers tomorrow night (doesn't soups and stews taste better the next day?)...gotta love leftovers.

Cleaning up some odds and ends from the freezer so I threw together a pasta primavera(ish) dish. Broccoli, peas, corn, carrots, and frozen shrimp sauted in some wine, lemon juice, cayenne pepper, and garlic and tossed with pasta. Tasted better than I anticipated.

We had eggs, toast and fruit. It was about all I could handle last night, but Kate loved it.

Tonite I have chicken in the crock pot.

6 boneless skinless chicken breasts
1 can cream of mushroom soup
1 packet of Lipton onion soup mix
4oz can of mushrooms

Cook in the crock pot 6-8 hours on low, but I put the chicken breasts in their frozen, so it will be done in 8-10 hours on low.

Once done, stir in 1/4-1/2 cup light sour cream. Serve over noodles.

I even have the pot of water already on the stove with the pasta sitting next to it.

My husband chose the recipe - California Casserole:

2 cups diced potatoes
3 stalks celery, chopped
1 onion, chopped
1 lb. browned ground beef
1 cup brocolli florets
salt & pepper to taste
the recipe called for one can cream of tomato soup to be poured over everything, but I used gravy instead.

layer everything in buttered casserole dish, bake at 325 for 75 minutes. It was really good - kind of like shepards pie.

I should have thought of something creative like your wraps.Todays lunch-I ate the chicken the exact way that I ate it last night. LOL Thanks for posting this thread. It's giving me some new ideas for the future

I made fish that I buy pre-breaded and seasoned so I just have to stick it in the oven for 12 minutes. I also made guatemalan rice and black beans to go with it. This is something I make alot because it is so easy and fast! Plus it is really healthy.
