Healthy Recipes...HELP!!!

Let me start off by saying...I'm not a good cook and I actually don't like cooking, but what I need from all of you are some EASY healthy recipes.

My DH was just diagnosed with fatty liver disease (non-acoholic) which stems from hepatits he got from tainted immitation crabmeat in his 20's and from being overweight. He loves to eat. He's a meat and potatoes kind of man.

What I usually cook is relatively healthy, but now...no red meat, no fatty foods, etc...

Anyone with some healthy ideas?????

BTW...I hate the smell of fish and WON'T cook it in the house, so if you have a recipe...it has to be grilled!

Amy if i were you I'd get a George Forman Grill, a rice steamer and some great Marinades like Soy Vay (or even make your own.)

I find buying the chicken breast, wild salmon, or pork loin and freezing portions in ziploc freezer bags WITH marinade it is soooo easy and delicious to just defrost and slap on the grill and so tender and juicy and healthy (depending on what's int eh marinade) The grill is FAST and easy to clean too.

And the rice steamer you can make loads of healthy rice with flavors too (not rice a roni etc but adding real herbs, there's usually a little herb holder). You can also steam veggies and make tofu. In the new models (I don't know how much they are) you can brown stuff too.

I'm sure you can do all this on your broiler and in a pot but for me if it's easy I tend to actually DO it!

Cooking Light Magazine has a ton of delicious, healthy recipes in each edition. You can also get recipes off their website. Some recipes call for a lot of ingredients but there are still many recipes that are not that difficult but are still delicious. The magazine also has great tips for living and eating healthier. I have subscribed for years and really enjoy the magazine.

Vegetarian recipe a lot of meat eater's love

10 Corn Tortillas
1 Jar/can enchillada sauce (I like the Pace varieties the best)
2 cans refried black beans (get the fat free)
2 C. shredded cheese

Mix half of the enchillada sauce with the beans (easier to spread the beans). Spread a little of the sauce/bean mixture on the bottom of a 9X11 pan. Layer tortillas (about 3/layer), beans, cheese, sauce. Make about 3 layers ending with cheese. Cover with aluminum foil and bake at 350 for about 45 minutes. Let stand about 15 minutes before cutting.

Serve with lettuce, tomatoes, salsa, sour cream, avacadoes, olives, or whatever you like.

I also found a great turkey recipe on allrecipes.com. It's called slow cooker thanksgiving turkey. Very easy. Just add some additional broth for moisture. Use turkey bacon to reduce the fat and fat free gravy. I made stove top stuffing and steamed veggies with it . It was great.

White chili is another good 'hearty' lowfat/highfiber recipe men love. (I use 'liquid smoke' so it satisfies the BBQ/open flame need in them too.) TONS of flavor!

I second the Cooking Light suggestion. I mostly make up my own recipes, but I have subscribed to Cooking Light for more than 10 years and get lots of great ideas from their recipes.

Chicken Chili (in the crockpot).

4 boneless skinless chicken breasts cooked on low all day with one can of 'lite chicken broth'. Once the chicken is cooked, shred it. Add 2 cans of Navy Beans, 1 additional can of chicken broth, 2 cloves minced garlic, 1 teaspoon cumin, 1/4 teaspoon red pepper (more if you like it hot), 1 tablespoon minced or dehydrated onion, salt and pepper to taste.

Cook for about 2 hours more in the crock pot. Eat with crackers or corn bread. Top with fat free shredded jack cheese.

Great in cold weather!!

We do Diet coke chicken a lot

4 chicken breasts
1 cup ketchup
1 diet coke
Put them all together in a pan on stove. cover and let simmer for 45 minutes.

Also
Salsa Chicken in crock pot

4 chicken breasts
1 cup ( or more ) salsa
Let cook in crockpot 8 hours

right before serving you can mix 1/4-1/2 cup of fat free sour cream with it.

We have both of these with brown rice.

ALSO.. Weight watchers has some good recipes as well as hungrygirl.com
Lots of lowfat recipes.

I make chicken stir fry all the time. I slice up a couple of boneless chicken breasts, saute them in a little olive oil and then add a bag of frozen mixed vegies, cover and cook for about 10 minutes. You can add a little soy sauce and then serve it over white rice. It's quick, easy, and healthy!

ok i can't help myself...sorry!
the first recipe may be low calorie but it is not a healthy meal...catsup is full of sugar and diet coke is not food. weight loss is important if someone has fatty liver, but a healthy diet is equally as important.

the second recipe looks great.

that said i agree with the cooking light magazine.
also your dh could see a nutritionist and get some good recommendations based on his personal health history.

if you're looking for simple ideas, i agree with grilling. you can go outside or get a george foreman.

lots of veggies. 3-4 cups a day (and not potatoes or corn) is ideal. sometimes (just like our kids) we have to eat things just because they're good for us.

if you pm me some of his favorite meals i can give you some alternatives that are healthier...

I hear what you are saying... about the first recipe BUT you can get a low sugar or no sugar ketchup and also if someone is used to eating a certain way and they have to change quickly sometimes there are some things that they can do that are still ok and doing a little more easing into it.

People who have to make drastic changes sometimes have a very difficult time and making it taste good (for them) and worth there while in more ways than just health can be very helpful.
But I do understand where you are coming from.

She is an amazing cook. Some the recipes will make you do a double take but trust me - they are each amazing and very easy to do. Also, they have nutritional information which is nice.

The spinach and white beans are amazing!!!!

Sparkpeople is a great website to learn how to eat healthy, track your food and has wonderful recipes.
