OT: Fish Recipes
My husband and my oldest son have returned from a fabulous fishing trip in Alaska and I now have 114 pounds of fresh frozen salmon and halibut in my freezer. Since I am not a fish person or much of a cook I was wondering if some of you more skilled people have any recipe ideas for fish. I have done salmon on the grill, but other than that I am stumped.

I don't have any recipes since I'm not a fish person myself but I was wondering where they went fishing and what kind of trip was it? My DH wants to go fishing in Alaska really bad for his 30th bday next year.

Yum! I LOVE fish. Here are a few easy recipies:
Start with 1 fillet of salmon, large enough for your whole family. Put it skin down on a well-greased baking sheet. Option 1 Put a few strips of bacon on top. Bake at 400 degrees until the bacon is done (salmon will be done too) Option 2 Put a few pats of butter (REAL butter, not margarine) on and under the fish. Bake at 350 degrees until done (salmon for 2 takes about 30 min) Serve with more butter. Option 3 Put a few pats of butter on and under the fish. Bake at 350 degrees until done Scatter capers over the surface of the salmon Bake 5 minutes more Serve And for the halibut, try this: Slice and rinse serving-sized portions of halibut Place each portion on a square of aluminum foil In a frying pan, saute sliced potatoes and onions in olive oil (enough for a side dish for each member of your family) When done, put a serving of the potatoes and onions on each portion of halibut Wrap foil around each fish/potato/onion portion Place on baking sheet Bake at 400 degrees until fish is done (approx 40 min for two servings) My favorite recipe site right now is Epicurious.com: Recipes, Menus, Cooking Articles & Food Guides - LOTS of good (free) recipes there, most with pictures. |

I'm not sure about halibut and salmon, but when I make fish (usually tilapia or mahi-mahi), I like to marinate it for at least 20 minutes in lemon juice or teriyaki sauce, then I just bake or grill it.
I love couscous as a side dish with fish. It is wonderfully mild and so it kind of takes on the taste of whatever you make with it.

I made a marinade a few weeks ago with balsamic vinegar, dijon mustard and brown sugar. I marinated the salmon for about 1-2 hrs and then grilled it. Yummy!
And like Dianne my favorite side dish for fish is also couscous! |

Hi everyone. Thanks for the recipes and marinade tips. I will try some tomorrow night. My husband and son flew from Mpls-St.Paul to Anchorage. They rented a car and drove 4 hours to Homer Alaska. My husband had set up 3 days of fishing through a charter service. They got up early and met the boat at the dock. There were several other people on the boat. The charter service supplied all fishing equipment. They would fish until about 4 each day. When they got back to the dock they were able to hand their fish off to be cleaned and filleted and flash frozen. The fish was then shipped to our front door. Both guys said it was wonderful. They saw whales and seals and puffins and lots of other wildlife. They stayed at a B and B and said there were lots of good restaurants in town. I would have loved to have gone, but the little guys would not have had fun.

I don't usually use recipes for salmon and halibut - just make something up; they are both so good without much being done to them (for example, broil salmon with just sea salt, pepper and dill; bake halibut with sea salt, pepper, and lemon - they just don't need a lot of "extra"). So I am no help, but I had to post because I am SO jealous - 114 pounds of salmon and halibut???? YUM! My two favorite fish! I am jealous!!!
