OT- St. Patty Day Dinner ideas needed

Does anyone have an idea for dinner tonight. No corned beef and cabbage for us - BLAH!!! I know, I know.....and I'm Irish too. So does anyone have any other ideas they can share with me please? TIA

Technically- corned beef and cabbage isn't REALLY a traditional Irish meal. They would actually use ham of some variety. BUT you could make salmon, champ, Irish soda bread, sausage, stew, or colcannon. I made a stew- dh will not eat corned beef and cabbage on St. Patty's day---just because it really isn't Irish.

Our newspaper today has a receipe for Chocolate Cream Cheese Guiness Brownies. I wish I had seen it earlier so I could have picked up some Guiness to make them. They sound much better than corned beef and cabbage!

This isn't Irish - but we had fun with the green theme. I put 3 drops of green food coloring in our macaroni tonight and the kids LOVED it! We also had GREEN beans! We used green plates, green cups, etc

We kind of cheated. I bought corned beef from the deli and we are making reubens and also having red potatoes. Maybe not officially Irish, but it's Americanized Irish!!!!
