This is a fun way to roast the turkey, and it turns out really juicy. I roast it breast side down (yes that would be upside down) and then I flip it over the last hour or so to brown up the top. The flip is hard, but it can be done, and is of course easier with a smaller bird. I use large utensils and my DH wraps oven mitts in foil to grab the bird. I usually get my recipes from Martha Stewart Everyday Food.

My Favorite Carrots:

This is all just from memory and I don't have a recipe, but you really can't screw it up. It's just a sauce, but it is soo yummy.

2 small bags of baby carrots
Steam or boil carrots until they are about 1/2 the tenderness you like them.

Fry 5 to 7 slices of bacon. Let the bacon cool and chop in to little tiny pieces. Save the grease. (OK..I didn't say they were exactly healthy!!)

In the bacon grease add one onion sliced into thin slices. Sautee till translucent. Add one small jar of carmel ice cream topping. The really sweet sticky stuff!! Heat until the topping has melted and is thinner.

Mix together the carrots, bacon, onion and sauce. Cover and put either in the oven to finish cooking the carrots or you can leave on the stove top, but the sauce will burn easily so you have to really watch it. The reason you only cooked them 1/2 way at the beginning was so that they can have a little time to absorb some of the yummy sauce!!

Try these carrots, they are awesome!!

Here is a good recipe for brussel sprouts. We LOVE them!!!

Roasted Brussel Sprouts with Bacon

3 tablespoons olive oil
1/2 pound bacon, diced
4 shallots, thinly sliced
1 pound Brussels sprouts, trimmed and halved
8 baby Yukon gold potatoes, quartered
Salt and freshly ground pepper
2 tablespoons unsalted butter
1 lemon, juiced

Preheat oven to 425 degrees F.
Heat oil over medium heat in a roasting pan or large skillet. Add the bacon and cook until golden brown and crisp. Remove the bacon to a plate lined with paper towels. Add the shallots to the pan and cook until soft. Add the Brussels sprouts and potatoes and toss to combine. Season with salt and pepper and roast in the oven until the vegetables are cooked through and golden brown. Remove the vegetables from the oven and stir in the butter and lemon juice. Transfer to a platter and top with the reserved bacon.

OK, this isn't exactly a recipe, but.....
I roast the turkey, stuffed with apples, on its breast until the last hour. Then I turn the turkey over and give it a little aluminum foil bikini and roast uncovered.
Remove the bikini and serve.

I have one oven. Using it four hours for a turkey doesn't work. So I butterfly the turkey, basically turning it from a cylinder to flat. Roasts in about an hour and a half. Much more time for everything else.

Sweet potatoes. Peel. Chop into about 2" cubes. Put in pan. Toss some butter and cream in. Heat. They will steam until soft. Mash right in pan with some cinnamon and nutmeg.

Regular potatoes. Cream and butter. Need a say more.

Cheese plate: Welsh cheeses to die for: Tintern (onion-garlic cheddar), Harlech (horseradish - sublime) Red Dragon (mustard seed) Black Mountain (white wine and garlic)

Peaches over ice cream. This sounds so simple but it is very very tasty. Get a big can of canned peaches. Drain. Take what you drained which is basically sugar and caramelize it. Basically heat it until it turns brown and tasty. The trick for making it caramelize easier is a little corn syrup. The two types of sugar mean that it probably won't burn. Add back peaches & cook a bit more. Killer over ice cream. And cheap and impressive.

Anything wrapped in phyllo is impressive too.

I wanted to add an easy way to cook a turkey is to put the cleaned turkey in an oven bag and add 2 cans of Frozen Orange Juice Concentrate. Cook and enjoy!!!
How easy is that??? And it tastes so yummy!!!

I look forward to all the side dishes on Thanksgiving.

One simple one that my Grandma always made was called Heavenly Hash.

She just put in one container of Cool Whip, one package of instant Pistachio pudding mix (ie: Jello-o brand or any other brand). Around 2 cups of mini marshmallows., a can of crushed pineapples (add juice and all to the mix), and some crushed nuts of your choice.

I am sure there are many variations of this recipe that are delicious as well. I know its so simple,but I look forward to it each year. It reminds me of my Grandmother who is no longer with us, and brings out the kid in me because I looked forward to this little mini dessert that would go on my plate with all the other Thanksgiving feast dishes.



Edited to add that we always have Perogies on Thanksgiving too. We just boil them, them fry them in butter and onions and season them. They are always a hit and have everyone fighting over the last one!

I love this thread. Its fun to read what everyone eats on Thanksgiving. I think its so neat how each family has its own traditions, and foods they always eat or think of on Thanksgiving. I 'm always trying to add more recipes or new dishes to our Thanksgiving that may become a tradition as well. And we have plenty of funny stories on past years and recipes we have tried that won't be a family tradition after I botched it up and everyone had to pretend they liked it!

My recipes are basic but I did want to share a tip if you are cooking a lot of food: Make your mashed potaotes in the morning or a couple of hours before your dinner and put them in a crock pot, this will keep them warm until dinner and you have just freed up a burner.

Thanks for the upside down turkey tip!

As the mom of 2 boys under 18 months who was crazy enough to JUST host Luke's party Saturday and is hosting Thanksgiving for 10 Thursday...

I am doing make ahead mashed potatoes and make ahead stuffing in Crock Pots.

For a super easy and yummy appetizer, we pour a jar of pepper jelly over a block of cream cheese and serve with crackers. Everyone loves it!
