Question Suggestions for Family Day recipes

Hi everyone!

August 1 will be our first Family Day! I want to start the tradition of making an authentic Guatemalan meal for dinner and use the place mats and napkins we bought while in Guatemala City picking-up our son. The dinner will just consist of us as a family - a quiet and private celebration.

Do any of you have some great recipes you would be willing to share with me. You can PM me with the recipes if you like.

oooh, I'm hoping for some replies on this. Our first Family Day is at the end of August and I too would like to make some traditional food.

The website mayantraditions.com does have a recipes link with a few recipes, including tres leches cake which I plan on making for dessert. It also sells a
Guatemalan cookbook. Does anyone have it? Is it good?

Fried Plantain

Hello!!

How fun!!! Here's something easy and very delicious!!! Buy some plantain (not bananas) and fry them in vegetable or corn oil on the stove. Usually they are sliced diagnonally. You want them to brown up a bit and have them be a bit crispy on edges...not too much so they don't burn.

Serve warm with sour cream....mmmmmm! Enjoy!

I was thinking of arroz con leche (rice pudding) for dessert

Arroz con Leche (my son begs me for this one!!!)

1 cup of rice
4 cups of milk
1 cinnamon stick
1/2 teaspoon of vanilla extract
1/2 cup of sugar

Soak the rice in cold water for 15 minutes. Drain and put on very low heat with 2 cups of milk along with the cinnamon stick.

When the rice is cooked, you can add the rest of the milk, the vanilla and the sugar....continue cooking, stirring once in a while.

Once some of the milk absorbs and it is heated up you can serve it!!!


Here's a recipe for a main dish I found....


Pollo en Pina
Chicken in Pineapple


3 1/2 to 4 lb chicken cut into serving pieces
1 ripe pineapple peeled cored and chopped
2 med oniosns finely chopped
2 cloves garlic chopped
2 whole cloves
a 1 inch piece of stick cinnamon
2 bay leaves
1/2 cup olive oil
1/2 cp white vinegar
1/2 cp dry sherry
2 med tomatoes peeled and coarsely chopped
Salt, ground pepper and chicken stock if necessary

Put chicken pieces into a heavy skillet or casserole. If
using fresh pineapple, be carefule and save all the juice.
If using canned pineapple, use the juice. Add all the rest
of the ingredients, including salt and pepper to taste. If
usinf fresh pineapple it may be necessary to add chicken
stock to cover the chicken pieces as the fresh fruit will
not have as much juice as the canned. Cover and simmer over
low heat until tender, about 45 minutes. If the sauce is
very abundant, cook partially covered for the last 15 minutes.
Serve with rice




Arroz Guatemalteco (this sounds identical to what I ate in Guate)
2 cps rice
2 TBL peanut oil
1 cp mixed vegetables (carrots, celery, sweet red peppers
and peas)
4 cps chicken or beef stock

Saute rice in oil, until rice has absorbed the oil but has not changed
color. Add vegetable, salt and pepper, and 4 cups of stock. Bring to
a boil, cover, reduce heat and simmer until liquid has been absorbed
about twenty minutes.

mmmm, that Chicken and pineapple sounds yummy!!!!!!!!!

We have fried plantains all the time(DH is from PR), so maybe I'll see if I can find some dish with a different twist on plantains.

I am going to try the plantains and the chicken and pineapple. I also got a recipe from a friend for a cold shrimp soup.

Off to the grocery store now.
Today is our very first Family Day! Yeah! It's a happy day!

I am going to post an updated photo tomorrow.
