Easy Recipes? Need help . . . BADLY!
We are having a small family get together for our son's 1st Homecoming Day celebration. We want to make some Guatemalan dishes, appropriate for lunch. We don't do well with complicated recipes . . . any easy ideas out there? I would REALLY appreciate it!

I guess a little depends on what you consider easy, but here is a thread with some receipes, including one for chicken stew that I did for my son's second birthday party.
Guatemalan Recipes - I NEED Chicked Stew! I don't deal with whole chickens, so I just used skinless, boneless chicken breasts and it was pretty easy. You can make it ahead an put it in a crockpot for the day of the party. We had fresh tortillas with it and Tres Leche cake for dessert. Happy cooking!
