macaroni and cheese...

ok, this is by far my FAVE crockpot recipe...it is soooo good:

spray the bottom and sides with cooking spray. then add:
2 cups milk (whole is best, but i have used skim and it is still yummy)
12 oz. evaporated milk(*most important item...do not try to leave it out!)
1/4 tsp salt
1/4 tsp pepper
1 pinch of dry mustard
8 ounces sharp cheddar cheese
(you can use any cheese really....my favorite is monterrey jack)
2 cups uncooked macaroni noodles


stir to mix

cook on low for 2-3 hours, until edges are bubbling and it is cooked through.

IT ROCKS!

I love mine. I've been using one for about 15 years now. A lot of things have been trial and errror. Here are a few of my favorites:

Baked apples - just make them as usual, stack up 6 in there, and add a little water (maybe 1/2 cup) on the bottom. You can set it on low all night, and when you wake up, the house smells great and you can eat them for breakfast.

Chicken thighs - sprinkle with Adobo seasoning (made by Goya) and cook.

Meatloaf - make your usual recipe. Then shape it into a large meatball, and put it on dessert sized plate that fits in the crock pot (for a base). Then I use a small fruit bowl inverted beneath that to keep it elevated (you need to keep it out of the grease). Put lots of ketchup on top and cook it 8 hours on low.

I found a couple of used crock pot cookbooks on the internet, so that helped a lot. Some things just don't work at all (rice and pasta turns into mush) and some things work out great.

My family likes most of the new Banquet and Marie Collender crock pot meals that you can buy in the store but I also like to put a few boneless chicken breast in and pour two bottles of bbq sauce over the top and let it cook for about 4 hours on high. Chili is also a favorite here.

Get some round eye steaks, add 2 cans whole tomatoes, onions, garlic, salt & pepp , cook on low for 8 hours, serve over egg noodles-- so tender!!

I am a lifetime dieter - I used my Crock Pot a lot...

One of my big favorites is putting some frozen boneless/skinless Chicken Breasts in the CP and then pour in a large jar of salsa (Any flavor, they have some great fruit flavored salsas now!) and a cup of water - let it cook all day on low.

I steam a steamer full of rice and serve the chicken on top of the rice with some salsa over the top.

Its pretty darn good

I also like Eye of Round, lightly browned in the skillet, then transfered over to the CP with a can of Cream of Mushroom and a can of water.

This is also good over rice

This was my kids (bio kids) favorite recipe....mine too. Its called Busy Day Chicken.

Put on frozen whole fryer chicken in crock pot early in the day. Pour 1 small bottle of your favorite BBQ sauce over chicken. Turn crock pot on and leave until dinner. The chicken falls off the bone and its absolutely wonderful!! Serve with rice and salad. Perfect meal for a busy day.

Crock Pot Recipe

I like to throw together Round Steak and Green Beans...


Slice the round steak while frozen into slices.
Then cook until pink is gone on stovetop.

Then toss in crockpot with stewed tomatoes, (I like to add a little rotel too- for spice), onions and french style green beans, top with a little garlic salt and let cook for a couple/few hours.

We like to put on (white or wheat) rice.

My secret ingredient for both pot roast and chicken in the crockpot is cranberry sauce (whole berry type).

With pot roast, get a good cut of meat. Ideally, you should brown the meat in a skillet with a little oil first. However, you don't absolutely need to do so. I've done it both ways.

Put some cut up potatoes, onions, and other vegetables in the bottom of the crockpot if you wish. Add the meat and rub it with any seasonings you like, such as garlic powder, a dash of pepper, etc.

Pour in a can of peeled tomatoes and scoop in at least a half of a small can of tomato paste. (Ketchup will do in a pinch, but it will change the taste.)

Add the cranberry sauce. If you want a lot of sweetness, put in the whole can; otherwise, use less. Add a little water, but not too much. Cook on low or medium until the meat and veggies are so tender you can practically use a fork to cut them.

Experiment with different cuts of meat. Some hold their shape better, while others fall apart. Some get deliciously tender, while others toughen up a bit. The nice thing about pot roast is that you can use meat that's cheaper than the meat you would choose for oven roasting, because the liquid will keep things tender.

I usually think of pot roast as a "just in the family" recipe. However, when I had a weekend guest who was notoriously bad about being back for dinner at a pre-arranged time, I made the recipe and kept it on low until she came back from errands. She was later than expected, but it was no big deal.

The meat was tender and she was really impressed that I had made such a "fancy" meal while doing chores and minding my daughter and her daughter. I served the pot roast with potatoes made in the crockpot plus some steamed asparagus and a salad that had dried cranberries in it to carry on the cranberry flavors from the pot roast. I opened a bottle of wine and things looked pretty fancy.

If you will just be eating with the family, consider using some rye bread to sop up the gravy. (Or maybe you'll do that later, when you're putting the leftovers into a plastic container.)

Even the girls, both eleven, ate some of the meat. And my daughter is so persnickety about food that she would rather go hungry than eat something she doesn't like a whole lot.

As to chicken, some books combine the cranberry sauce with a tablespoon or more of frozen lemonade concentrate to give a sweet and sour flavor. Personally, I find that makes things a little too sweet, but use your judgment.

There are a lot of good crockpot recipe books on the market. Your local big chain bookstore probably has a dozen or more. Skim through them until your mouth starts watering.

Turkey Pot Pie with Cornbread Crust

2 lbs boneless turkey breast, cut into ½” cubes
2 cups frozen peas and carrots, or frozen mixed veggies
2/3 cup all purpose flour, divided
½ tsp ground black pepper
2 carrots, sliced
2 potatoes, peeled and chopped
2 cloves garlic, minced
1/2 cup sherry (I used apple juice!)
2 1/4 cups chicken broth
1 tsp salt
¼ tsp cayenne pepper
2 stalks celery, sliced
2 medium onions, chopped
1 can (4 oz) sliced mushrooms, drained (TOTALLY optional, mushroom- BLAH!)

CORNBREAD
1 cup all purpose flour
1 tbsp baking powder
2 tbsp sugar
1 cup milk
1 cup yellow cornmeal
1 tsp salt
1 egg, lightly beaten
¼ cup vegetable shortening

Combine 1/3 flour, salt, pepper & cayenne pepper in bowl. Toss turkey cubes in flour/spice mixture and place in crock-pot. Add carrots, celery, potatoes, onions, frozen peas and carrots (or frozen mixed veggies), garlic and mushrooms. Pour broth and sherry all over, Stir to blend. Cover and cook on LOW 7-9 hours or HIGH 4-5 hours.

Turn crock-pot to HIGH while preparing cornbread. Preheat oven to 400 degrees F. Blend remaining 1/3 cup flour with 1/3 cup cold water; stir until smooth then blend into stew in crock-pot. Cook, stirring occasionally, 15 minutes or until stew is thickened.

For cornbread, combine cornmeal, flour, baking powder, salt and sugar in mixing bowl. Blend in egg, milk and shortening. Pour over stew. Life removable stoneware from electrical base and place in preheated over. Bake 15-20 minutes or until cornbread is golden brown. Allow to stand 15 mins before serving. Makes 8 servings.

Low Fat Chicken Stroganoff

4 boneless skinless chicken breast
1 can reduced fat Cream of Mush soup
1 container light sour cream
1 pkg onion soup mix

Add all ingredients and let cook on low for appx 8 hours. I usually serve with egg noodles or rice. You won't even miss the calories in this one!!

"Christmas-y shredded BBQ beef (for sandwiches)"

4 lbs. stew meat
1 16 oz. can tomato sauce
1/4 cup vinegar (any)
1 onion chopped finely
2 cloves garlic minced
1.5 tsp. cinnamon
1/4 cup brown sugar

Put in stew meat, combine the rest of the stuff in a bowl and pour over it. Cook on low 8-10 hours. Take out meat with slotted spoon and shred and return to sauce. We make BBQ beef sandwiches with this every Christmas eve and have cranberry apple coleslaw with it.

Soup!

1 small package boneless, skinless chicken thighs (about 8)
1 can italian style stewed tomatoes
3 stalks celery sliced
1/2 small package of baby carrots, cut in half
3 garlic cloves, chopped
1 can low sodium, low fat chicken broth
1 box frozen spinach (or a small bag of fresh baby spinach)
1/2 cabbage, chopped in big pieces
1 small pkg. sliced mushrooms
1 tsp. dried thyme
salt and pepper

Throw it all into a large stock pot with water to just cover it all in the morning, cook all day on low and the chicken will fall apart and it'll be ready to go at dinner time. Freezes really well and it's GREAT for a diet.

Okay, this isn't a crock pot recipe but it's super simple and very tasty.

3-4 boneless chix breasts
1 chopped onion
1-3 T olive or other oil
1 can chopped tomatoes (I usually use the kind with spices already added)

Coat bottom of skillet with oil. Salt and pepper both sides of chicken anad then brown lightly on both sides. Throw onion in, brown for a minute or two until opaque. Put tomates in and cover. Cook 10-15 minutes or until done.

To serve, place a chicken breast on the plate, spoon some of the tomato mixture over top. Sprinkle cheddar cheese on top. Microwave to melt the cheese if you want.

Also good leftover!
