Share your Homemade Recipes

Since my son has been home I have searched for recipes that are alternatives to those found at the supermarket, thus eliminating preservatives and other additives manufacturers put into food for a longer shelf life. Below are some of the best Buttermilk Pancakes I have ever tasted. I found the recipe on the Internet and I can make these pancakes ahead of time and refrigerate or freeze them, thus heating them up for breakfast during the week.

Buttermilk Pancakes

1 egg
1 ¼ cup flour
1 cup buttermilk
1 tablespoon granulated sugar
2 tablespoons vegetable oil
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
butter for the pan

Beat egg in mixer and then beat in remaining ingredients except the butter. Heat pan, grease with butter and pour in ¼ cup mixture for each pancake. This recipe makes about nine pancakes.

*If you don’t have buttermilk ~ Take glass measuring cup and add 1 Tablespoon lemon juice or vinegar and pour in milk up to the 1 cup line. Let it sit for several minutes.

There are 2 books called FEED ME,I'M YOURS and S.N.A.C.K.S ( Speedy, Nutritious And Cheap Kids' Snacks) that I think you might like. I use them all the time. They are full of healthy recipes .

This is my favorite:

World’s Best Pumpkin Bread
* This recipe makes two loaves

In a large bowl mix together: Sift Together:
½ Cup oil 3 1/3 Cups flour
½ Cup applesauce 2 tsp baking soda
2 cups sugar ½ tsp baking powder
4 eggs 1 tsp salt
1 can pumpkin 2 tsp cinnamon
2/3 Cups water tsp cloves



Grease two loaf pans, preheat oven to 350. Gradually add the dry ingredients to the wet and mix to combine. Divide the batter evenly between the two pans. Bake in preheated oven for 60 min. Allow to cool. Dust bread with confectioner’s sugar.

I bake everything from scratch, I even grind my own whole wheat flour. I use it in place of white flour in all recipes and to make it better still, I substitute 2 tbs of the wheat flour with soy flour. depending on what the recipe is, I usually also swap some of the flour (and add a little extra) with wheat germ, wheat bran, oat bran,and milled flax seed. I'd love to see the nutritional analysis for my pancakes or waffles made this way. I make full batches & freeze the left over. Are there any specific grocery store items you're looking to replace? homemade granola is great too

Some of my friends and I plan on getting together every week and sharing different recipes that we can make for our families.
I have a lot of my own and just thought this would be a good place for all of us to share our recipes with each other.
You make your own flour? Where do you get the wheat and how do you grind it? That isn't a bad idea.
