Guat veggie recipes?

Next Saturday we are celebrating our daughter being home with us for two years. I wanted to know if anyone has any good vegetable recipes from Guatemala they would be willing to share?

The main dish will be chicken in vegetable sauce, which I got out of False Tongues and Sunday Bread.

Hi Tina,
I just looked in my Guat. cookbook and under Veggies and side dishes this is what is listed. If any of these sound good to you let me know and I'll post the recipes, but I didn't want to type them all out if they don't sound good. I've never made any of them, so I can't tell you if they're good or not!

Guatemalan Rice
Cauliflower or String Beans Fried in Egg
Cabbage and Sausage
Fried Black Beans
Roasted Green Onions

There are also some salads so let me know.

Envueltos de Coliflor o Ejote
Cauliflower or String Beans Fried in Egg

4 Servings

1 lb. cauliflower or
1 lb. string beans
2 large eggs
2 tablespoons flour
1/2 teaspoon salt
vegetable shortening or oil for deep frying

Steam the cleaned cauliflower or string beans in boiling water, drain and cool. Separate the cauliflower into large pieces of 2 florets and group the string beans into groups of 7-12 beans depending on their size.

Separate the egg whites and beat them stiff. Fold in the salt, yolks and flour. Dip the vegetables into the batter, shake off excess and deep fry until golden turning once. Set a group of string beans on a large spoon to dip into the egg and then gently lower the beans on the spoon into the hot oil. They should make a flattish mound.

Serve warm with tomato sauce.

Frijoles Negros Volteados
Fried Black Beans

8 servings

1 lb. black beans
2 medium onions
3 cloves garlic
1 1/2 tablespoon salt or to taste
2 tablespoons vegetable shortening or oil

Soak the beans overnight to reduce cooking time. Cook the beans with 1 quartered onion and garlic and enough water to always cover the beans. Add salt when beans are close to being done. Continue cooking until soft and grind in food mill. Heat the vegetable shortening in a large skillet and cook the remaining onion, finely chopped, until golden. Add the beans, and fry on medium heat, stirring constantly to avoid sticking. Continue to fry until the liquid has evaporated and the beans form a thick mound.

Serve with tortillas, white cheese or cream for breakfast or the evening meal.

Roasted Green Onions

Allow about 5 per person

Small green onions
salt
lemon juice
pepper

Clean the onions and cut off roots. You will have the white onion and the green stalk. Place on hot barbecue grill or in a hot skillet on the stove. Allow the onions to brown and burn slightly, turning as necessary. When tender, remove from heat and sprinkle with salt and lemon juice.

Quick Refried Frijoles Negro

We love the refried black beans we ate in Guatemala, but I usually don't have time to make them from scratch. We have found the La Preferida brand to be very good, we buy the 99% fat free ones and love them. I find them to be best when they are heated very hot. Just wanted to share.

I will post some other recipes from my files, some of them came from others here.

Arroz Guatemalteco

2 cups rice
2 TBL peanut oil
1 cp mixed vegetables (carrots, celery, sweet red peppers
and peas)
4 cps chicken or beef stock

Saute rice in oil, until rice has absorbed the oil but has not changed
color. Add vegetable, salt and pepper, and 4 cups of stock. Bring to
a boil, cover, reduce heat and simmer until liquid has been absorbed
about twenty minutes.

Guatemalan Corn Cake

Guatemalan Corn Cake

1 yellow cake mix
1 lg package vanilla instant pudding
4 eggs
1/2 cup vegitable oil
1 - 81/2 oz cream style corn
(put in the blender and liquify it. then pour it
into a measuring cup and add milk until it is
1-cup.)
1 teaspoon vanilla

Mix all ingredients on medium speed for 2 minutes.
Pour into a greased and floured bunt pan.
(I did make it in an angel food pan- bunt is better)
Bake on 350* for 55 minutes (check w/a toothpick)
Cool for 15 minutes then turn out of pan.
Cool completely
Just before you serve it dust powdered sugar over the top.

It is yummy!!!!!

This is the last one I'll post, Hope your party is great!!

Rellenitos de Platano (Served at Dona Luisa's Restaurant in Antigua)

INGREDIENTS:
3 Plantains, not very ripe
1 cinnamon stick
1 1/2 cups fried black beans
2 ounces sugar
3 tbsp cooked cornmeal (polenta)
oil

DIRECTIONS:
Wash the plantains and cut each into 5 to 6 pieces. Cook them in a small amount of water together with the cinnamon stick. Peel them and mash tem or put them through a sieve, adding the cornnmeal. With this dough make pancakes 4 inches in diameter, not very thin, put some black beans in the middle and fold them over.
Heat oil in a skillet and fry the rellenitos. Serve them with a little sugar on top.

Thanks so much for posting these, Rhonda. Would you mind telling me if there are many recipes that are vegetarian in the book? I always thought that there would not be many vegetarian recipes, but if there are I will buy the book.

btw, I made the Guat Corn Cake last year for the celebration, and it was very easy and a big hit!
