We Wanted You by Liz Rosenberg is about a little boy adopted from a Hispanic country. It does not specifically say Guatemala (could be Colombia) but it is the best I've found. I cry every time I read it to my kids!

Over the Moon by Karen Katz...she adopted her daughter from Guatemala. Again it doesn't say Guatemala specifically in the book but the pictures and the story...foster parents etc definitely fit.
