Crock Pot Recipes?

So today, I pulled out my crock pot which basically gets zero use in my house. Seriously. I got it for my wedding shower almost 15 years ago and have maybe used it 5 times...

Anyway, I threw in a rack of baby back ribs, and voila! The easiest, most tender ribs I've ever made!

Seriously ~ why has this thing been collecting dust all this time when it could be doing my work for me?

Sooo, anyone have a crock pot recipe you just LOVE?

Crockpot Paella

6 boneless, skinless chicken thighs
1/2 lb shrimp, peeled and deveined
1 large onion, diced
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
3 cloves garlic
1 (14.5 oz can) diced tomatoes, undrained
2 c chicken broth or stock
1.5 c brown rice
2 TBS Italian seasoning
1 tsp turmeric
Pinch saffron threads
3/4 tsp salt
1/2 c frozen peas
Sliced scallions, for garnish (optional)

Place all ingredients except shrimp and peas in crock pot. Stir well. Cover and cook on low 5 hours. Add shrimp and peas and cook an additional 20 minutes. Serve; top with scallions, if desired.

I normally throw in a nice chuck roast, some onions, 2 cans cream of mushroom soup, 1 can of cream of onion soup and let it cook all day. You can add other stuff like fresh mushrooms or other veggies.

Another thing I've made is take some stew meat, some mushroom soup and some mushrooms and throw it all in there. Make some egg noodles (or rice) and put that over the pasta or rice. It is so yummy!

Wow Julie - thanks! I've been looking for a pulled pork recipe!

Helen, do you have to put water in the bottom of the pot when making the roast?

My DH is moving from nights to days (well, sort of days, sort of afternoons) for the first time in 15 years. He is quite the fast food freak, so he'd constantly want to eat FF during the day...but he works for UPS, so he was on the move, basically "running" 10 miles a day (according to his pedometer).

Anyway, his new job is a desk job, and he's worry that he'll lose his boyish figure if he continues to eat the crappy foods he's used to...

So hopefully, he'll maintain his weight, and I'll lose some. A girl can dream, right?

Yeah, that's how I've made it in the past and it still turns out great. I've never gone ff with the cream cheese though, just low fat.

I found the most incredible Chili recipe and can't find it! Later after E goes to sleep I'll post my bolognese sauce, beef stew and hopefully that chili recipe!

Since DDW "stole" my recipe I don't have one to share.... . But I just wanted to say I always use the 1/3 less fat (I think it's called that) cream cheese and the "light" soups. I've tried it with Fat-Free and it doesn't work as well.

My husband loves "cheesy crockpot chicken".

4-6 boneless skinless chicken breasts
2 cans cheddar cheese soup
1 can cream of chicken soup
salt, pepper, garlic powder to taste

Cook on low about 6 hours and serve over rice or noodles.

pepper steak

I got this recipe from my mom, its meant for a nesco roaster, but it will work with a crock pot too. I dont use recipes, and neither does my mom, so the measurements arent really exact. we just kinda throw stuff in and see how it tastes.
Round Steak (tenderized)
2 green peppers, cut up in slices
1 or 2 onions
1 pkg onion soup mix
1 pkg gravy mix (or make your own gravy)
3 to 4 TBL of Soy Sauce
1 to 2 TBL Sugar
Garlic powder or minced garlic
Pepper
Salt

What i do is saute the peppers, onion, and garlic in oil or butter for a few minutes to get the nice browning flavor, then pour some water in to deglaze the pan, (just a little) and then put your round steak in the crock pot, thawed, and put the pepper and onions on top, then mix the two packages of gravy with 1 or 1 1/2 cups of water, mix good, then dump that on top of the meat. put pepper and salt in, and mix the soy sauce and suger together and put on top also. Then just put the cover on and let it go. Since its in a crock pot, not a roaster, you dont need much liquid. i would say like, 6 hours on high and 8 hours or more on low. it is excellent!! it took me a few times to get it exactly the way i want it. Good luck
ps- I LOVE cooking in a crock pot, i go to work at 8:30, turn it on, and when i get home at 5:30, its done. MAGIC!!! tastes great, hardly any work. Have fun making all these new recipes!!!
