|
How to cook squash??
Ok- so I'm starting DD on squash this week. I've been fine making the carrotts & sweet potatoes myself but I have absolutely no idea how to cook squash & what type I should be using... any suggestions?

I have done butternut, acorn, and banana squash. It is super easy to make. Cut it in half, scrape out any seeds with a spoon. Put the squash cut side down in a baking dish with an inch or 2 of water and bake at 350. Poke it with a fork every so often. Once it is soft, take it out, cool it, scrape the squash out of the skin and puree it. Save the water you baked with to use for thinning.
This is one of my favorites to make because it is so easy!

I did basically the same thing - no water tho. And I didn't even puree it, it was mushy enough just by mushing it with a spoon. Butternut was my favorite.

I steam ours (it takes a while though!) and then mash with a fork, a little butter, a little honey and some salt and pepper. YUMMY!

I guess I am the cheater then. I use the frozen butter nut squash cubes.

Butternut squash is a favorite around here, too. I usually do exactly what mommamarci described. But sometimes I will also peel, cube and season it before baking because you get more of the taste of the seasonings that way. It's yummy. I coat them in olive oil and sprinkle thyme or rosemary. Bake it in a covered dish so it doesn't dry out. D loves eating it in cubes and I also use it in a pasta dish with spinach, mushrooms and other veggies. It's a really easy dinner.
