Profile Question: How did you word....
I'm working on our profile/web site and I'm not sure how to word the part where we describe the gender/race(s) that we are open to. How did you handle this? I know at the agency they will probably handle this themselves for the actual profile book, but on my personal web site, I'm not sure how to create the paragraph and how to word it...I know what it is (what we are open to, what we are looking for), but that doesn't sound right. How did you handle it?

I think you need to be honest and I think you can do this without using offensive language. It is what it is. You don't want to start off with a lie.
Maybe say something along the lines: We are a couple looking to adopt and are open to many races.

We include ours with my family description because I was talking about the diversity (through adoption and marriage) of my family and how that diversity added to our family. The specific words I used were.
"Diversity and adoption are a large part of my family life. My family greatly enjoys the added cultural aspects that each member brings to our gatherings. I have cousins that are Asian and Hispanic and my family has welcomed through marriage, members that are South American and Middle Eastern. We value their heritage as our own and would welcome, with our families, a child of any race into our home." If you were selecting only certain races, I don't know how to put it honestly. For gender selection, you could note things about looking for a princess or wanting a little boy to throw a football with I guess.
