...our favorite cookie recipes.

I thought it would be nice to share cookie recipes since so many people seem to give them to neighbors, friends and relatives (not to mention taking them to the office) over the holidays.

Let's see how many different ones we can get.

Here's my "Holy cow companies coming now" recipe.

It's usually for muffins.

Just mix
dry cake mix

1 can of pumpkin

NO other ingredients needed
Voila! I've been told it makes excellent cookies. But I know the muffins are excellent! Use spice cake mix. Or any other cake mix and add spices.

Mint chocolate Cookies

3/4 c brown sugar
3/4 c granulated sugar
1 cup margarine
1 tsp vanilla
2 eggs
1 tsp salt
1 tsp baking soda
2 2/3 C flour
1 package of any of the following: Mint M&M's (Available only at Christmas), Andes Candies Baking pieces (I find them at Target) or York Peppermint Patty baking pieces.

Preheat oven to 375

Mix sugars and butter. add eggs and vanilla. Mix in baking soda, salt and flour. Stir in baking pieces.

Drop by spoonful onto cookie sheet, bake 10 mins

Makes 3-4 dozen, depending on how big you make your cookies

Chocolate No Bake Cookies

2 cup granulated sugar
6 tablespoons cocoa
1/4 cup milk
1/2 cup butter or margarine
3 cups quick-cooking oats
1 teaspoon vanilla extract
3/4 cup peanut butter

1. Bring to a boil sugar, cocoa, milk and butter. Boil for 1 minute.
2. Remove from heat and quickly add oats, peanut butter, vanilla and nuts.
3. Drop by teaspoonful on waxed paper. Let stand until cool.

You can optionally add in chopped nuts or raisins too.

These 3 ingredient peanut butter cookies could NOT be simpler and most people always have these items on to make them. They are crispy and delish. No flour required! Perfect for kids on gluten free diets.

Simply Yummy Peanut Butter Cookies

1 cup peanut butter
1 cup white sugar
1 egg

1. Preheat oven to 350 degrees F (180 degrees C).
2. Combine ingredients and drop by teaspoonfuls on cookie sheet. Flatten slightly with a fork. Bake for 6-8 minutes. Let cool.

Recipe doesn't make very many, so you could double recipe as you desire.

Onhazier - my mom used to make those all the time. We always called them Boiled Cookies. Our family loves them.

OMG!

Onhazier - I think you just gave the recipe that my grandmother used to send us every year for Christmas - wrapped and mailed in the empty oatmeal box.

Grandma about the worst cook ever - I think those cookies were the only thing she could successfully make. And they were great. Gobbled them up every year.

She passed away a few years ago. I haven't thought about her for awhile - what a nice memory right before Christmas. Thanks.

I do! I do! I don't have time to post it now because I have to relinquish the computer to my 6th grader, who needs to look up Norway for a school project, but I'll try and get back tonight to post it, and my coconut cookie recipe

Ohhh sounds like we have got some good recipes going on here (and some that are a little silly but oh-so practical!)!!! This is one of my favorite recipes that the kiddos also love....


Soft VEGAN carob chip and peanut butter cookies


1 1/2 cups unbleached all purpose flour
1/3 cup old-fashioned of quick oats
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chunky peanut butter
1 cup packed golden brown sugar
1/2 cup vegan margarine (such as earth balance or blue bonnet LITE)
1/4 cup maple syrup
1 to 2 egg substitutes (1 mashed banana, or commercial egg replacer such as Bobs red mill or ENER-G egg replacer)
1 teaspoon vanilla extract
6 ounces of carob chips, or vegan carob/chocolate bar crushed until there are pretty small,
but still chunky pieces


Mix dry ingredients (first 4) in a medium bowl.

Blend peanut butter, sugar, margarine, syrup, egg replacer and vanilla with an electric mixer. (Tip: If you soften the margarine and peanut butter first by nuking it you can just blend it by hand).

Add dry ingredient mixture to peanut butter mixture in two additions. Stir in carob. Cover and refrigerate for about 30 minutes, or until it is no longer sticky.

Preheat oven to 350 degrees fahrenheit. Grease two large baking sheets. Roll balls of dough with hands into about 2-inch diameter balls. (Or make any size you want, just pay attention to baking time changes.) Place on baking sheets and bake for about 12 minutes. Cookies will be puffed and still very soft to the touch. Let cool and enjoy!

Ok here is one of my most favorite and fun ones to do with kiddos.

Lemon cookies
1-lemon cake mix
1 stick of butter
2 eggs

mix, place on cookie sheet by spoon fulls and bake at 350 til done.

You can do any cake mix flavor like this. I LOVE the lemon and the devils food the best. You can also do a white cake mix and use sour cream instead of butter and remove the yolks. YUMMY!

I'm glad that the recipe is a fond one for everyone. My mom always made them. I've seen them called Boiled Chocolate cookies too. Due to how they look, my brother called them "Dog t**d cookies" and it stuck.

I've been craving them for a week. I've got all the ingredients. However, I'm not going to make them until this cold goes away and I can taste again.

Here's another easy recipe, this time for fudge. It was one my Grandma always made and that she passed on to me. Yes, the recipe below is for real and is actually very good.

Pinto Bean Fudge
1 cup cooked, unseasoned pinto bean puree
3 tsp vanilla
5 oz baking chocolate (You can use the cocoa powder/butter equivalent)
5 lbs (or more) powdered sugar

Melt the baking chocolate. Mix with bean puree until very smooth. Mix with powdered sugar until it begins to feel stiff. Drop onto wax paper. If the fudge hasn't set after a few hours on the wax paper, you can scrape it back into a bowl and add more sugar. Add nuts if you want them. You can also add chile powder for some zip.

Best Butter Cookies

2 c butter, softened
1 1/2 c sugar
2 eggs
1 tsp vanilla
5 cups flour
1/4 tsp salt
2 tsp baking powder

Cream butter, add sugar. Beat and add eggs and vanilla. Combine flour, salt and baking powder. Mix in gradually to butter mixture. Mix well. Roll out to 1/8-1/4 thickness. from here you can use cookie cutters to make them whatever shape you want, and can garnish with colored sugar if desired. Bake 6-9 minutes at 375
