Coconut Cream Cheese Cookies

3/4 c sugar
3 oz cream cheese
1/3 c butter or margarine
1 egg yolk
1 tsp almond extract
2 tsp orange juice
1 1/4 C flour
1 tsp salt
2 tsp baking powder
1 large bag sweetened coconut, divided

Combine sugar, cream cheese, margarine, egg yolk, almond, OJ, flour, salt, baking powder, and 3 cups coconut, setting the rest of the bag aside. Refrigerate dough one hour. Preheat oven to 350. Roll dough into balls about the size of a walnut , roll into remaining coconut. Bake 10-12 minutes. (Note: They will not look done but they are.). Let rest on cookie sheet for 2-3 minutes before transferring to cooling rack.

Since we are talking about cake mix cookies... here is our favorite:

crust
1/2 cup margarine or butter
1 (18 1/2 ounce) box yellow cake mix
1 large egg
Top layer
2 large eggs
1 (8 ounce) package cream cheese, softened
1 lb powdered sugar
1/2 cup coconut, shredded
1/2 cup walnuts, chopped
Directions:
1 In a large bowl, combine the cake mix, margarine and egg until moistened.
2 Pat mixture into a 15 x 10-inch greased jelly roll pan.
3 Bake at 350° for 10 minutes.
4 Remove and cool while you make the top layer.
5 In large bowl, beat 2 eggs lightly.
6 Beat in cream cheese and powdered sugar.
7 Add coconut and nuts.
8 Spread mixture evenly over curst in pan.
9 Bake at 325° for 40-50 minutes or until golden.
10 Cool in pan on a rack to room temperature.
11 Cut into small squares or bars.
