OT: What's for dinner?

I have to imagine that those with larger families have great ideas for filling meals on the fly. What are some of your favorite recipes/methods of preparation?

Today we are having pulled pork in the slow cooker and a green salad. I am trying to get more use out of my slow cooker and I am investing in another pressure cooker. What do you guys have on the burner?

I am spoiled... its leftovers from my MIL!!! If my little guy wouldnt be sleeping we would have ate there!!! I used to do lots of crockpot meals for DH and I when I worked fulltime. Now I just go to moms!!

Mmmmm food!!!

Just me and hubby right now, so we can be a bit more crazy

Tonight is sushi "salad". I will make some sushi rice and chill. Cut up some avacado, radish, carrots, scallions and shrimp serve over greens and crumble up nori on top. Oh and don't forget the wasabi dressing

Dh is grilling. He has veggie kabobs and shrimp kabobs. They stay separate because I'm horribly allergic to shellfish. We're also having corn on the cob. Lots of work, but so worth it.

I actually make up 2-3 months of (rotating) menus at a time. I shop once a week, once at the regular market (milk, eggs, etc...) and once at the farmers market. Both on saturday. I buy meat in bulk at Sams or Costco, and split it up into correct "portions". I season the steaks and chops and chicken right in the zipper bag, so as it thaws, it marinades.

Tonight is enchillada casserole. I grilled extra chicken breast on tues night. (I use a 9x13 foil pan b/c I hate cleaning up after this one)You pour in 1/2 cup or so of sauce, then layer tortilla (dip in sauce to coat), chicken, cheese, black beans/peppers/onions... (I get this pre-mixed in the freezer section) repeat for 2-3 layers. Add cheese and any leftover sauce to the top, cover with foil, bake for 30-40 min on 350, just until cheese is gooey and everything is warmed through.


Whenver I grill, I make extra. It's planned for another meal later in the week. Sunday is leftover day unless we are gone. (Like this weekend for fathers day). Then leftover day becomes saturday.

FlyLady.com has a TON of easy, cheap, QUICK meal ideas! I got a LOT of stuff from there. LOVE the Rubber chicken!!!!!

We are having SAM'S meatballs in crockpot with mushroom soup mixed with milk. Cook all day. Make rice! Serve together add a green salad and you are set!
