Spaypet's mention of lentils reminded me of my husband's favorite dish which comes from my Moosehead cookbook. If you are unfamiliar with Moosehead, it is a vegetarian restaurant somewhere in New England, I think. Anyway, they have several cookbooks -- they are not all Vegan recipes, although the book often mentions Vegan alternatives/substitutions.

There are lots of recipes in there involving lentils, and also sweet potatos seem to be a staple for many meals. My favorite from this book is "black bean and sweet potato burritos"... I know, it probably sounds gross, but it is YUMMY, and no cheese necessary!
