Here's one of Ryan's favorites and it's easy:
4-6 chicken strips - breasts sliced into fingers. Boneless, skinless.
1/2 - 3/4 cup instant potato flakes
Ranch dressing
Wash and pat dry the chicken strips.
Roll in ranch dressing, then potato flakes.
Bake at 425 degrees until crispy, about 20 minutes.
Ryan loves 'em.
Another thing: He loves anything he can dip into anything else. So, grilled chicken dipped into ketchup, he'll eat way more than if we just gave him chicken but he doesn't get a ton of ketchup either.
