Butternut squash is a favorite around here, too. I usually do exactly what mommamarci described. But sometimes I will also peel, cube and season it before baking because you get more of the taste of the seasonings that way. It's yummy. I coat them in olive oil and sprinkle thyme or rosemary. Bake it in a covered dish so it doesn't dry out. D loves eating it in cubes and I also use it in a pasta dish with spinach, mushrooms and other veggies. It's a really easy dinner.
