So, what I had was a good "how to knit" book - the one I bought was by Debbie Bliss, but there are lots out there. They will work you through projects from easy to hard, teaching you the basics as you go along.
The easiest thing I think is to do a basic scarf, all in garter stitch. You will learn how to cast on and off and how to do the basic knit stitch.
I would recommend you find a yarn store in your area - something locally owned and operated, but if you don't have that go to some place like Michael's (Walmart would be okay, but I can't guarantee the people who work there know how to knit) and tell them you are new to knitting and can they suggest a project and can they get you started?
