Three-Bean Moroccan Stew (Yummie!!)
Ingredients:
2 teaspoons olive oil
1 large onion
1 and 1/2 teaspoons cumin
1/4 teaspoon ground cinnamon
2 cans chicken broth
1 can diced tomatoes
1 can garbanzo beans, drained and rinsed
1 can cannellini beans, drained and rinsed
1 can black beans, drained and rinsed
1 cup golden raisins
1 package (10 oz.) baby spinach, fresh or frozen
Heat olive oil in large pot over medium-high heat. Add onion, and saute for 3 minutes. Add cumin and cinnamon; stir and reduce heat. Add all other ingredients except spinach. Stir, and let simmer for 15 minutes. Add the spinach, and simmer for 3 minutes until spinach is wilted. Enjoy!
