Unhappy Any countries open to a bipolar adopting?

My wife and I can't have biological children and were quite excited about the prospect of adopting from Korea. Unfortunately we were rejected after the pre-application because 6 years ago I had (my one and only) bipolar episode. I've been VERY stable since and religiously take my meds and see my doctor every 2 months who has vouched for my stability. However, the Korean screeners were spooked by the diagnosis and we were denied before the process really got started. Needless to say, both my wife and myself are devastated. Not only because of the Korean rejection, but we are now wondering if this will be an insurmountable stumbling block for ANY country we apply to. Does anyone have any advice to help us out? What's the best way to minimize the impact of this in the future? Also, are there any countries that we may have better luck with?
