Its normal to be ambivalent at times. Your whole life has changed and your trying to get a new rhythm. Some people even go through post adoption depression.

A schedule of sorts can be helpful to all. A time for bed, getting up, and naps is a start. A 3 year old needs time outdoors to run off steam. We have colors and paper always available to our 3 year old. We also read a lot and have a book shelf 3 book shelfs down low for him. I have always stored all our toys in clear bins in the garage. I bring in a new bin everyday the bins are organized into themes farm animal, dinosaurs,blocks, legos, whatever. Kids play better if their aren't a jumble of unrelated toys. My kids look forward to seeing what bin comes in. When younger siblings go down for their nap I bring in a bin for the older kids with small pieces. Building blocks are always available at our house as well as dress-up-clothes. Take walks with your 19 month old.

Do you belong to a mothers group? They can be very enjoyable for you and your kids. Their are also many programs that are available for mommy and toddlers try one. Enjoy toddlerhood passes very fast.
