We were in the same situation. We deicded to adopt back in Aug 2004, and my DH was still 28 then. He turned 30 on 10/5/05, and we sent in our app to our agency on 2/14/05, so about 7 and 3/4 months ahead of his birthdate. As you can see from my signature, the paper chase/home study/waiting for I-171H (that was the longest wait - 2 months, which set us back about a month from where we had hoped to be) took almost 9 months. So yes, I think May would be fine, but you may even want to send it in around March if they let you.
