I agree with Yusen...don't turn the offer down...sounds like they really want to celebrate with you!!
If you don't feel you'll need much, have you thought about asking for things like gift certificates to the zoo, museums or other family outing places that you'll get around to doing later? Maybe rec center/pool passes? (I don't know how old your kids are so adjust accordingly here...lol! gymboree etc.)
