Pasta - with butter and salt, occassionally she would eat it with sauce.

If you have a Russian food store, stock up on some Pelmini and Pierogies - great to keep in the freezer for the quick boil and serve meal when all esle fails.

In the early days she would eat a baked potato with chopped meat in spaghetti sauce.

She rarely ate anything that didn't not look like its originally pre-cooked from. So if you are doing something elaborate -like a casserole or lasagna- show her the pieces that go in first
