If your dossier is done, then you don't have to do anything. The only way it could become an issue is if for some reason PGN finds an issue with the old employer letter and then notices it came from a different company.
In addition, on the U.S. end, IF you don't go to visit before the adoption is final then you will need to provide the Embassy with up-to-date proof of income, where they could find the difference as well.
You could ask your homestudy what to do but my recommendation would just not to rock the boat. I had a job change in the middle of ours and had no issues.
